You went to pig cheeks, and I went to steak. I love its straightforwardness. I love its saturated fats. I am still a student of the various cuts, and will be for some time. But even with my limited knowledge, I can tell you that corn-fed beef is not the "best in the world." This, and broccoli side dishes, are the reason you have a healthy skepticism for American steak houses. Cows are meant to eat motherfucking grass.
